Start with fresh, high-quality beans. Coffee beans lose their flavor over time, so it’s best to buy them in small quantities and store them in an airtight container away from light and heat.
The water you use is just as important as the beans. Always use filtered water to avoid any off-flavors. The ideal water temperature for brewing is between 195°F and 205°F. Too hot, and you risk over-extraction; too cold, and the coffee will be under-extracted.
Puck preparation is critical for espresso. After grinding your coffee, distribute it evenly in the portafilter and tamp it with consistent pressure. This ensures even extraction and prevents channeling, which can lead to bitter or sour shots.
